Jerusalem
Artichoke
While
one would think the root vegetable,
also called sunchoke, is a member of the artichoke family, it is actually in
the sunflower family.
Jerusalem Artichoke is a vegetable
singular to North America and was
first cultivated by Native
Americans. It contains high amounts
of the soluble fiber inulin, which
is why in some individuals it can
create gas. Jerusalem Artichoke
tastes like a potato in its raw form
and retains its texture when steamed
or boiled, making it a pasta/flour
alternative for gluten intolerant or
celiac individuals.
Jerusalem Artichoke is a powerhouse
of nutrients, especially potassium.
It is high in iron, fiber, niacin,
phosphorous, and copper. It is
considered one of the hardiest
winter roots as well.
Preparation
When preparing Jerusalem Artichokes,
wash thoroughly but do not peel.
Slice, dice, or shred. Add to a
salad or eat by itself with extra
virgin olive oil and lemon juice, or
rice vinegar. They are wonderful
potato alternatives to steam, bake,
boil, fry, mash, or use in soups.

Matzoh |
Every year before Passover, our
celiac, gluten intolerant clients
ask about gluten-free matzoh. Until
now, we did not know that it
existed. We recently found a vendor
from the east coast who makes a hand
made, kosher oat matzoh that is
certified gluten-free from harvest
to table.
If there is enough interest, we will
place a special order for our
clients. Each box contains three 8
oz. pieces of circular, shmura
matzoh. Each box costs $23.00
without tax. Please email us at
