Question #1:
What is the difference between refined sugar and milled cane sugar? It is healthier to bake with milled cane sugar or is it process the same way as refined sugar?
Answer #1:
The milled cane does not have chlorine bleach in it like white sugar.
Milled cane is occasionally okay, but not great, except for baking. I usually cut in half the sugar called for a recipe. Then, I use 1/2 pure maple syrup and 1/2 molasses (i.e. for one cup sugar substitute - 1/4 c. molasses, 1/4 c. pure maple syrup, add 1/4 c. four to recipe). This is great for cookies, muffins, and spice cakes. For other cakes or pies, I usually use 1/2 the sugar with 1/2 Sucanat (dried cane juice) and 1/2 raw sugar.
Question #2:
Does Bonnie have an opinion on algae products for people suffering from "IBS" or multiple food intolerances? I keep eliminating foods and for a bit I'm ok but then I'm right back where I started. Supposedly the algae products detox the lower intestine so that you can reintroduce foods.
Answer #2:
This would be fabulous, if true. Algae is a mild detoxifier, but will not remove food intolerances. Rotating reactive food families is the best way to prevent new intolerances. Recently, we have
discovered that people with chronic multiple food intolerances often have heavy metals in their system (a hair analysis can determine this). Infrared saunas are an incredible way to chelate heavy metals,
and on a more minor scale, chlorella, if present.
